Description

Ethiopia Yirgacheffe Kochere is an exceptional coffee hailing from family-owned farms clustered around the Kochere mill, situated in the heart of the Kochere district within Ethiopia’s Southern Nations, Nationalities, and Peoples’ Region. Owned and operated by Matewos Ersemo and his family, the mill serves as a hub for around 650 small-scale farmers who bring in their ripe coffee cherries.

Upon arrival at the Kochere mill station, the cherries are meticulously sorted and depulped to ensure only the highest quality beans proceed. The beans then undergo a fermentation process lasting 36 to 48 hours before being thoroughly washed to remove any remaining mucilage. Still encased in their parchment, the wet beans are spread in thin layers on raised drying beds. During the initial days of drying, they’re turned every 2 to 3 hours to promote even dehydration. Depending on the weather conditions, this drying phase takes between 12 to 15 days until the beans reach an optimal moisture content of 11.5%.

Once perfectly dried, the beans make their journey to Addis Ababa, Ethiopia’s vibrant capital. There, they’re dehulled, carefully sorted, and bagged, ready to be shared with coffee enthusiasts around the world.
