Monsooned Coffee is a fascinating variety from India, with roots tracing back to the ship trade routes between India and England. The coffee was originally exposed to the moist monsoon winds during transit, causing the beans to swell, absorb moisture, and change to a straw-yellow color. Nowadays, this transformation is replicated through a controlled “monsooning” process in ventilated warehouses, where the beans absorb moisture up to 16-20% under the influence of monsoon winds. The resulting coffee is aromatic and characterful, though milder and non-acidic. With a full body and robust chocolate undertones, Monsooned Coffee harmoniously blends lighter spice notes of cardamom and cinnamon, making it particularly popular in Northern Europe
